♡香酥蔬菜饼 Cucur Sayur♡

冰箱还剩下一些韭菜和豆芽,
快手快脚,做了宝贝们的下午茶*香酥蔬菜饼*
好香好脆,咔嚓咔嚓吃停不了口~



材料:
豆芽 1饭碗,去尾洗净
韭菜 1把,洗净切段
大葱 1大个,切丝
红萝卜 1小节,切丝
(蔬菜种类和份量可依自己的喜好自行调整)


面糊材料:
合隆厨师粉 半包(约130克)

盐 1茶匙
水适量
食油 5大匙

做法:
1.先把合隆粉,盐和食油拌匀,再加入适量的水,拌匀待用。
2.把全部蔬菜倒入面糊中,充分拌匀。
3.准备一个小锅,倒入油(油量要多点) ,待油够热后用汤匙舀入蔬菜面糊,以中小火炸至两面酥脆金黄色,即可捞起,沥干油份后即可上碟。


Cucur Sayur
Ingredients:
a bowl of bean sprouts
a handful of ku chai (leek), cut into section
1 big onion, sliced
1/2 carrot, shreded
(You can use any others of vegetable that you like)

batter ingredients:
130g (half packet) Hup Loong cook's frying powder
1 teaspoon salt
water to add
5 tablespoon cooking oil

Steps:
1. Mix the frying powder with salt and oil, following with water until the batter smooth.
2. Add in all the vegetables and mix well.
3. Using a small pot, preheat the oil (the level of oil must be able to cover the batter), spoon the batter into the pot and fry it until golden colour and crunchy.

♡日式照烧鸡腿 Teriyaki Chicken♡

前几天去了商场逛,本来是要找两种酱料即日本Mirin和日本酱油来做
*日式照烧鸡腿*但是就是找不着, 
最后还好找到了Teriyaki Marinade Sauce 日式照烧鸡腿酱(烤蒜味)~
今天就动手做了这简单又容易的一道日式料理~!



材料:
全只鸡腿 3支
日式照烧酱5~6大匙
麦芽糖 1大匙


做法:
1.将全鸡腿洗净,用吸油纸或布擦干水份,在腿上刮几刀,以便容易入味。
2.将照烧酱均匀地涂抹在鸡腿上两面,存入冰箱至少一小时。
3.准备一个不粘锅,倒入少许油,把鸡腿放入锅中,皮朝下。
4.以中小火将皮面煎至少为上色,再翻过另一面煎。剩余的腌酱可倒入锅中,期间可盖上锅盖以便鸡肉更加快熟和上色。(在煎鸡腿的时候,不时翻鸡腿以免烧焦)
5.待鸡腿熟后,再加入麦芽糖滚溶,酱汁变浓稠即可熄火。捞起鸡腿,待微凉后,可斩件,上桌,淋上少许酱汁在鸡腿上,即可享用。


Teriyaki Chicken
Ingredients:
3 whole leg chicken
5~6 tablespoon Teriyaki Marinade Sauce
1 tablespoon maltose

Steps:
1.Wash the whole leg chicken and dried it with kitchen towel. Poke the whole leg chicken with a knife.
2.Add in teriyaki sauce and mix it well with the chicken. Keep in the refrigerator for at least 1 hour.
3.Preheat a non stick pan, add in some oil, put the chicken on the pan, (the skin faced down).
4.Pan fry both side of the chicken with medium heat until brownish colour.(In between, must keep on eyes and turn both side to prevent scorched)
5.When it is almost done, add in a tablespoon of maltose and bring it to boil with the teriyaki sauce until become thicken sauce, off the heat. Cut the chicken into pieces, place on serving platter and lastly drench with teriyaki sauce and it is ready for served.

♡香葱肉碎水豆腐 Steam Tofu with Fried Shallots Minced Meat♡


香葱肉碎水豆腐
材料:
水豆腐1盒
(在盒装背后的四个角,用剪刀减出四个小洞,再撕开盒装纸袋,轻轻敲一下,美美的水豆腐就倒出来了)



小葱头2颗,切片
蒜末1大匙
五花肉碎3大匙

虾米1大匙,剁碎
红萝卜碎1大匙
红辣椒碎1大匙

调味料:
香菇蚝油1大匙
酱油1大匙
胡椒粉少许
麻油1/2茶匙
薯粉水1大匙+1大匙水

做法:
1.热油,倒入葱头片,爆至香脆,捞起备用。
2.另一个小锅隔水将水豆腐蒸熟,(约8~10分钟)将蒸好后多余的水份倒掉。
3.爆香蒜末和虾米,炒香萝卜和辣辣末。加入肉碎翻炒。
4.加入调味料和少许水,炒至肉碎熟后加入少许薯粉水勾芡。
5.
将炒好的肉碎淋在水豆腐上,撒上炸葱片和葱花即可趁热享用^&^





Steam Tofu with Fried Shallots Minced Meat
1 box of smooth tofu
(Cut a small hole at every bottom of the box by using a pair of scissor, tear the plastic cover, slowly transfer the tofu into a plate)
2 shallots, sliced
1 tablespoon chopped garlic
3 tablespoon minced meat

1 tablespoon chopped dried shrimps
1 tablespoon chopped carrot
1 tablespoon chopped red chilli

Seasoning:
1 tablespoon mushroom oyster sauce

1 tablespoon soya sauce
pinch of pepper
1/2 teaspoon sesame oil
1 tablespoon tapioca flour+1 tablespoon water

Steps:
1.Heat the wok with some oil, fried the shallots until golden color, transfer into a bowl, set aside.
2.Using another small pot, steam the tofu for about 8~10 minutes, take out and drained the steam water.
3.Saute garlic,
chopped dried shrimps until fragrant. Following add in chopped carrot andchopped red chilli. Add in minced meat stir fry it.
4.Add in some water and seasoning, stir fry again until all well cooked. Pour in some tapioca water for thickening the gravy.
5.Lay the minced meat on the top of the tofu, sprinkle some scallion and fried shallots on the top. Served it with rice or porridge when it is still hot.

♡手撕面粉糕 Mee Hoon Kueh♡

烟霾朦胧导致没胃口吃饭,
就动手做了宝贝们百吃不腻的晚餐呗~*手撕面粉糕*





材料: 面粉2杯
鸡蛋1个
盐少许
食油2大匙

水100-120克(视面粉的湿度,无需用完)
(将所有材料拌均搓至面团光滑,休面半至一小时)

上汤材料:
江鱼仔半碗,洗净

沙葛 1个,去皮切片
黄豆1/4碗
姜半寸,拍扁
水1 1/ 2 升
(水煮开,放入所有材料滚至江鱼仔出味,约半小时)

调味料:

胡椒粉
盐少许
酱油适量

佐料:
炸江鱼仔
长豆(洗净切段后预先汆汤熟)

香菇丝
鸡胸肉片
肉末
鱼饼
炸葱
(依个人喜好,自行准备佐料)

做法:
1. 用一个小锅倒入已煮好的汤,待滚后,用手拉开面团,撕块状后放入锅中。
2.加入
肉末,鱼饼,鸡胸肉,香菇丝等佐料滚至熟即可倒入碗中,在加上长豆,炸好的江鱼仔,炸葱就可开动啦!
**就是喜欢用手撕的面团,就是爱上那口感**
**搓面团时水份慢慢加入,揉成面团光滑就行了。

Mee Hoon Kueh Soup
Ingredients:
2 cups wheat flour
1 egg
pinch of salt
2 tablespoon cooking oil

100-120g water(depend of the dough)
(Mix all the ingredients until the dough smooth and set aside rest for half an hour-one hour)

Soup Ingredients:
1/2 bowl of anchovies,washed and drained

1 jicama,peel off the skin & sliced
1/4 bowl of soya bean
1/2 inch ginger
1 1/ 2 litre water
(Add in all the ingredients into a boiled water and boil for about half an hour with lower heat )


Seasoning:
pepper
salt
soya sauce

other ingredients:
fried anchovies
long bean(washed, cut into section and boiled until cooked in advance)

mushroom (sliced)
minced meat

sliced chicken breast
fish cake
fried shallots(Depend on your favourite to add)


Step:
1.Use a small pot, pour in half of the anchovies soup and bring it to boil. Tear the dough into the pot.
2.Add in minced meat, chicken breast, fish cakes, mushrooms and bring it to boil until the dough & others ingredients well cooked and transfer into a bowl. Add in long bean, fried anchovies and sprinkle some fried shallots. Then it is time to enjoy it ^^

♡甜腐皮炒素菜 Stir Fry Vegetables with Sweet Tofu Skin♡

好吃的素菜,不腻常煮~
一家大小都爱吃的*甜腐皮炒素菜*
豆味香甜的甜腐皮是这道菜不可缺少的主要食材。
有了它,素菜才会更加美味,更香甜。








材料:
甜腐皮 2大片,剪小块



















冬粉1把,浸软后沥干水
红萝卜1小节,切片
香菇3朵,浸软切丝
包菜5~6大片,洗净切块状
水适量



































调味料:
盐少许
酱油适量
做法:
1.以中小火将甜豆支炸脆,备用。


2 .爆香香菇,加入红萝卜片翻炒,加入包菜和调味料翻炒约一分钟。加入适量的水再翻炒。
3.待包菜七分熟,加入腐皮拌匀,期间可再加些水,最后加入冬粉拌炒至软即可上桌。


Stir Fry Vegetables with Sweet Tofu Skin
Ingredients:
2 big pieces sweet tofu skin, cut into small pieces
a fistful of vermicelli,soak until soft and drained it
2 inches of carrot,sliced
3 dried mushrooms,soak until soft and sliced
5~6 pieces cabbage,washed & cut in medium pieces

water to add


Seasoning:
salt 
soya sauce

Steps:
1.Pour in some oil in the wok, fried the sweet tofu skin with medium heat until golden color, set aside.
2.Saute mushrooms, carrot until fragrant, add in cabbage & seasoning quick stir fry for a minute. Add in water and stir it well.
3.When the vegetables is 70% cooked, add in tofu skin and vermicelli. You may add in some water again because vermicelli will absorb water very fast. Stir it well and cook until tofu skin and vermicelli well cooked and ready for served.

♡咕噜素肉 Vegetarian Ku Loh Meat♡

周五简易晚餐~咕噜素肉
宝贝们真的以为是荤的咕噜肉,呵呵~
p/s:这只是单纯想吃就煮的,我有加洋葱,所以不是纯素的哦!~ 




材料:
咕噜素肉 1包(素食品店可买到)

洋葱半个,切丁
红萝卜 1小节,切丁
红辣椒 1条, 切丁
日本黄瓜 1小节,切丁
芝麻 1大匙(预先炒香)

调味料:
番茄酱 2大匙
冬菇斋蠔油 1大匙
胡椒粉少许
糖 1大匙
Maggi seasoning 4-5滴
水 1/2杯
薯粉1大匙+2大匙水

做法:
1.首先将素肉,过油炸至金黄色,捞起沥干油备用。
2.用一个小锅,倒入所有调味料(除了薯粉水),待滚后加入洋葱,红萝卜,辣椒,黄瓜丁,拌均匀后再加入已炸好的素肉拌匀,熄火。
3.撒上芝麻即可上桌。




Vegetarian Ku Loh Meat
Ingredients:
1 packet of vegetarian Ku Loh meat
1/2 onion, diced
2 inches carrot, diced
1 red chili, diced
2 inches japanese cucumber, diced
1 tablespoon sesame (roasted)

Seasoning:
2 tablespoon tomato sauce
1 tablespoon oyster sauce
pinch of pepper
1 tablespoon sugar
4-5 drops Maggi seasoning
1/2 cup water
1 tablespoon tapioca flour+2 tablespoon water

Steps:
1.Deep fry the ku loh meat until browning color and set aside.
2.In a small pot, pour in water and others seasoning (except tapioca water), bring it to boil. Add in diced inredients (onion, carrot, chili, cucumber),mixed well and lastly add in ku loh meat stir well and off the heat.
3.Sprinkle sesame and ready for served.

♡莲藕四季豆炒虾仁 Stir Fry Lotus Root with French Beans & Prawns♡

简单的“莲藕四季豆炒虾仁”
香脆可口,不错吃!~

材料:
蒜头 2瓣,切片
红萝卜 1/2寸,切片
虾仁 10只,去壳
四季豆 10条,切段
莲藕 1节,切薄片
水适量
调味料:
盐适量
胡椒粉少许
鸡精粉少许
1.预先将莲藕薄片汆烫3分钟,捞起沥干备用。
2.爆香蒜片及红萝卜,加入虾仁翻炒一下再加入莲藕和四季豆翻炒。
3.加入适量的调味料和水,翻炒至熟即可上桌。
Stir Fry Lotus Root with French Beans & Prawns
Ingredients:
2 cloves of garlic, sliced
1/2 inches carrots sliced
10 medium prawns
10 french beans, cut into section
1 lotus root, sliced
Water to add
Seasoning:
Salt
Pepper
Chicken stock powder
Steps:
1. Boiled a pot of water.Bring in the sliced lotus to boil for bout 3 minutes.
2. Saute garlic and carrots, add in prawns and stir fry well. Following add in lotus root and french beans.
3.Add in seasoning and water and stir fry until well cooked.

♡夏威夷鸡肉皮萨 Hawaii Chicken Pizza♡

凡事都有第一次~
皮萨初体验之超薄版~"夏威夷鸡肉皮萨"
宝贝们也一起来”煲“办,满满的材料,今天大家都好有满足感哦!



皮萨饼皮材料:
高筋面粉 250克
酵母 1茶匙
温水 150克
糖 1茶匙
盐 1/2 茶匙

馅料:
番茄膏 1罐(tomato puree)
蘑菇 1罐 ,切片
1/2个 洋葱,切碎
1/2个 黄梨, 切丁
1小饭碗 鸡胸肉(预先用烧水汆汤)
香肠 2条, 切片
玉米油 1大匙
Mozzarella 芝士  150克
干香料oregano & Basil 少许



做法:
1.温水中加入酵母,糖拌匀。
2.把面粉倒入大盆中,加入盐,用手拌匀在慢慢粉次加入已经拌好的(1)材料。
(一面搓面一面加)
3.用手搓至面团光滑后,用条湿布盖着,休面至少一个小时。
4.待面团发成双倍后,取出排气,面团分成两份,再用面秆杆成您喜欢的薄度。
5.在面皮上先涂上一层玉米油,再涂上番茄膏。
6.把其余的馅材料铺在面皮上。最后再撒上Mozzarella 芝士和干香料。
7.将皮萨放进预热的烤炉里,以220摄氏烘20-25分钟即可乘热享用。
*番茄膏可以以番茄酱代替
*烤皮萨的温度只供参考,因为每个人的烤炉热情不一样,自己自行拿捏。

Hawaii Chicken Pizza Dough ingredients:
250g high protein flour
1 teaspoon dried yeast
150g warm water
1 teaspoon sugar
1/2  teaspoon salt

Stuffing:
1 can tomato puree
1 can button mushroom, sliced
1/2 onion, chopped
1/2 pineapple,diced
1 small bowl chicken breast,diced & boiled in advance
2 sausage, sliced
1 tablespoon corn oil
150g Mozzarella cheese
pinch of oregano & basil


Steps:
1.Add yeast & sugar into warm water mix well.
2.In a big bowl, add in flour & salt. Slowly mix it with step (1).
3. Mix well and covered it with a wet towel and sit aside for at least one hour.
4.When the dough is double size up, bring it on the working table and cut it into two dough balls.Roll out each dough to thin slice.  
5.Spread some corn oil and following with tomato puree.
6.Lay on all the ingredients and lastly sprinkle Mozzarella cheese, oregano & basil.
7.Preheat the oven and bake in 220 celsius for about 20-25 minutes.

♡双椒炒鸡胸肉 Stir fry Capsicum with black pepper chicken breast♡

简易~双椒炒鸡胸肉~
搭配黑胡椒,炒出来的鸡胸肉,
香味更加浓郁,同时也带出灯笼椒的鲜味。


材料:
鸡胸肉 1大片,切丁
青灯笼椒 1个,切丁
蒜头2瓣,切片
鸡丁调味料:
蚝油 1大匙
酱油 1大匙
黑胡椒粉1茶匙
黑胡椒酱:
黑椒调味料 1大匙
黑胡椒粉(粗状)1茶匙
蚝油 1大匙
Maggi seasoning 3-4滴
水适量
(黑胡椒调味料,蚝油,maggi seasoning 先与适量的水拌匀)
薯粉水少许(勾芡用)
做法:
1.将切好的鸡丁用以上所有的调味料拌均匀,存入冰箱至少一小时。
2.用一个平底锅,倒入少许油将鸡肉炒成八分熟后捞起备用。
3.爆香蒜片,加入黑胡椒酱待滾开后倒入灯笼椒翻炒。
4.加入鸡胸肉拌均匀,滚至黑胡椒汁稍微浓稠,再拌入少许薯粉水勾芡即可上桌。
Stir fry Capsicum with black pepper chicken breast
Ingredients:
1 piece chicken breast, diced
1 capsicum, diced
2 cloves garlic,sliced
chicken breast seasoning:
1 tablespoon oyster sauce
1 tablespoon soya sauce
1 teaspoon black pepper 
Black pepper gravy:
1 tablespoon black pepper seasoning
1 teaspoon black pepper
1 tablespoon oyster sauce
3-4 drops Maggi seasoning
water to add
(Mix all the seasoning above with water)
Tapioca flour + water(for thicken the gravy)
Steps:
1.Marinate the chicken breast and keep in refrigerator for at least one hour.
2.Preheat a pan, add in 2 tablespoon of oil and stir fry the chicken breast 80% cooked & sit aside.
3.Saute the garlic, add in the well mixture of black pepper & bring it to boil, following with capsicum, stir fry well together with chicken breast too.
4.Add in some tapioca water for thicken the gravy then ready for served.

♡脆口DIY鸡蛋豆腐 Pickled Lettuce Minced Pork Egg Tofu♡

又是宝贝们爱吃的DIY鸡蛋豆腐~
这次换一换口味,加入了罐头香菜心搭配肉碎一起炒后,铺在鸡蛋豆腐上,
香脆有嚼劲,口感十足的~ *脆口DIY鸡蛋豆腐*



材料:
DIY鸡蛋豆腐 1盒,切砖块状后预先油炸
DIY鸡蛋豆腐食谱,请参考这里




瘦肉末 半小饭碗
罐头香菜心 7-8小片,切碎
蒜末 1大匙
红萝卜 1寸,切薄片
青葱 1小棵,切碎
红辣椒 半条,切碎(我忘了加)
水少许




调味料:
蠔油 1大匙
胡椒粉少许
黑酱油少许
糖少许(可以不加)
薯粉水少许

做法:
1.爆香蒜末,加入红萝卜,香菜心炒香。
2.再加入肉末一起翻炒后, 倒入少许水以及调味料。
3.倒入少许薯粉水勾芡,把它淋在之前已炸好的豆腐上,撒上青葱粒即可上桌。


Pickled Lettuce Minced Pork Egg Tofu
Ingredients:
1 box DIY Egg Tofu, cut into block size and fried it in advance
DIY Egg Tofu Recipe,please refer Here
1/2 small rice bowl of minced pork
7-8 slices pickled lettuce, chopped
1 tablspoon chopped garlic
1 inch carrots, sliced
1 small stalk scallion, chopped
1/2 red chilli, chopped
water to be add

Seasoning:
1 tabespoon oyster sauce
pepper
dark soya sauce
sugar (optional)
1 tablespoon tapioca flour + 1 tablespoon water

Steps:
1.Saute garlic ,carrots & pickled lettuce until fragrant.
2.Add in minced pork and stir fry together. Following add in some water & seasoning.
3.Pour in a bit tapioca water to thicken the gravy and topped it on the egg tofu, sprinkle some chopped scallion & ready to served.

♡樱桃牛油蛋糕 Cherries Butter Cake♡

简单又容易做的“樱桃牛油蛋糕”
满屋飘香,还没出炉,家里的小瓜们,一直虎视眈眈着烤炉里的蛋糕。
待凉切片后涂上少许柠檬糖霜,微酸甜,不油不腻,非常开胃就被他们扫了一半,搭配美禄吃,今日的下午茶!
食谱来自Guai Shushu , 谢谢Kenneth Goh 师的分享~




樱桃牛油蛋糕材料:
牛油 125克
鸡蛋 3颗
自发粉 140克 (过筛)
樱桃碎 80克
幼糖 80克(我减至50克)
鲜奶 50克
炼奶 50克
香草精 1/4茶匙(可以不加)

柠檬酱
糖霜 1/4杯 (我只用3大匙)
柠檬汁 1/4茶匙 (我用1大匙,所以调出来的酱较稀)



做法:
1. 首先将牛油和幼糖打发至松浅奶色,加入香草精,鸡蛋(鸡蛋需要一颗一颗慢慢加入),炼奶,以低速打发均匀。
2.加入1/3的自发粉和鲜奶,用勺子轻轻的拌匀,再加入其余的2/3自发粉拌匀。
3.将1大匙的自发粉拌进樱桃碎里,拌匀。然后,轻轻的将它拌入面糊中,再将面糊倒入长方形的模里。
4.预热烤炉,以160摄氏烤约30-45分钟。
5.烤好后,取出蛋糕待凉才切片,淋上柠檬酱即可享用。
