♡咸鱼蒸肉饼 Steamed Minced Pork with Salted Fish♡

炎热天气没胃口吃饭,
今晚就来份简单又容易准备的*咸鱼蒸肉饼* 
哇哇哇,好下饭哟!





材料:
肉碎 200克
姜丝 1大匙
红辣椒丝 1大匙 
古楼咸鱼 1小块,预先煎香后切碎

调味料:
酱油 1大匙
胡椒粉 少许
绍兴酒 1大匙
玉米粉 1大匙


做法:
1.将肉碎与调味料混合均匀后倒入蒸盘,用汤匙压平。
2.撒上姜丝、辣椒丝和咸鱼。
3.水滚后,大火蒸15~20分钟即可享用。

Ingredients:
200g minced pork
1 tablespoon shredded ginger
1 tablespoon shredded red chilli 
a small piece Kurau salted fish, fried till crunchy in advance & chopped

Seasoning:
1 tablespoon soya sauce
dash of pepper
1 tablespoon of cooking wine
1 tablespoon corn starch

Method:
1. Mix the minced pork with seasoning, transfer into a steam tray. 
2. Sprinkle some shredded ginger, red chilli & salted fish on the top of the minced meat.
3.Steam under high heat for about 15~20 minutes.

♡酸甜笑虾虾 Sweet & Sour Prawns♡

新年必吃的年菜*酸甜笑虾虾*
酸甜开胃,鲜虾鲜甜,好下饭哦!








材料:
鲜虾 400克,剪掉虾头,用牙签挑出虾肠和肮脏,洗净沥干备用
蒜末 2大匙
红辣椒 2条, 去籽切碎
文冬姜 1寸,切碎
青葱 1把,切粒

调味料:
盐巴 少许
番茄酱 2大匙
糖 少许
水 适量
粟粉 1大匙+2大匙水 (勾芡 用)

做法:
1.爆香蒜末、红辣椒碎和姜末,加入鲜虾、盐巴和番茄酱,翻炒片刻。
2.加入少许水和糖继续翻炒至虾子熟。起锅前勾芡至酱汁浓稠即可上碟。
3.撒上青葱趁热享用。


Ingredients:

400g of prawns, (cut the prawns head with scissors & dug out the intestine of the prawn by using a toothpick, washed under running water and drained)
2 tablespoon of minced garlic
2 pcs of red chillies, minced
1 inch of Bentong ginger, mince
1 stalk of scallion, chopped

Seasoning:
dash of salt
2 tablespoon of tomato sauce                                                                                                                    sugar to taste                                                                                                                                   
100 of water
1 tbsp corn starch+2 tbsp of water (for thickening the gravy)

Method:
1. Saute minced garlic, ginger & chillies until fragrant, add in prawns, tomato sauce stir fry for a            while.
2. Add in some water & some sugar to taste. Continue to stir fry until the prawns cook. Add in          corn starch to thicken the gravy. Off the heat, transfer on a plate.
3. Garnish with some spring onion and it is ready to serve.

♡花生饼 Peanut Cookies♡

2019年~棒嘟嘟己亥猪年年饼之*花生饼*
一家大小的最爱








每个新年一定不可少的年饼,
只因一家大小的最爱。
特幼的*花生饼*入口即化,
年饼一出炉,大的小的迫不及待想尝吃它。
坚持传统制作,自炒花生、去依、磨碎。
虽然过程比较多工,但是能为家人做饼是件幸福的事,不是吗?










材料:
1.花生1公斤
2.面粉1公斤
3.糖粉700克(我只用600克)
4.盐1茶匙
5.花生油650-700克(我用红鹰油较有花生香味)
6.蛋黄1颗加一匙水拌均(以涂在花生饼上)

做法:
1.将花生倒入炒菜锅內,以小火不断翻炒之花生依可脱开,约半小时。
2.炒好的花生,倒入一个大竹篮,用手搓花生依去依。
3.将去依的花生分次放入搅拌器,搅至细幼粉状。
4. 将材料1-4倒入大盘中,拌均匀,再慢慢分次倒入花生油,用手拌均匀。
(油的分量可多加或减少,依个人用的面粉而异,加到面团可搓成圆形即可)
5.用手拿一小面团,搓成圆形放在烤盘上
,烤之前刷上蛋液。
6.预热烤炉,以170°C烤20-30分钟或至花生饼变浅褐色。
**如不想麻烦可在烘赔店买现有的花生。但个人觉得还是自己炒的比较香**






Ingredients:
1kg Peanuts
1kg wheat flour
700g icing sugar (I reduce to 600g)
1 teaspoon salt
650~700g Peanut oil / cooking oil (I use Helang brand cooking oil)
1 egg yolk + 1 tablespoon water (egg wash)

Steps:
1. Stir fry the peanut in a dry wok with low heat until aroma for about 30 minutes.
2. Let the peanut cool down for a while. Removed the peanut skin.
3. Divide the peanut into few portions. Blend it with the food processor until fine.
4. Mixed well the ingredients 1-4 into a mixer bowl. Slowly add in peanut oil, mixed well by                  using the hand.
   (the amount of oil depends on what brand of the flour that you use). Add the oil until the mixture can be shaped in round shapes.
5. Take a small portion of the mixture & dough it into a small ball shape, lay it on the baking tray, egg wash the peanut balls
6.Preheat the oven, baked under 170 Celsius for 20-30 minutes or until light brown color.
