♡黑胡椒鸡扒 Black Pepper Chicken Chop♡

今天就简简单单在家里一手“煲”办亲爱的生日晚餐~
做了他最爱的黑胡椒鸡扒和宝贝们最爱的蘑菇浓汤。
虽然一大早得准备所有材料,但能够让家人吃的津津有味,再辛苦也值得!~呵呵。。。

黑胡椒鸡扒
材料:
全鸡腿 4只,去骨
腌制调味料:
蚝油 2大匙
酱油 3大匙
黑胡椒粉1茶匙
白米酒/绍兴酒 2大匙
黑胡椒酱:
蒜头 2-3瓣,切片
白洋葱1/4个,切碎
黑椒调味料 1大匙
黑胡椒粉(粗状)1大匙
蚝油 3大匙
Maggi seasoning 4-5滴
水适量
(黑胡椒调味料,蚝油,maggi seasoning 先与适量的水拌匀)
薯粉水少许(勾芡用)
配料:
西兰花 1棵,切块
红萝卜2寸,切片
马铃薯泥

做法:
1.预先将去骨的鸡腿与所有的调味料拌匀,按摩几分钟,让鸡腿入味,存入冰箱至少3小时或隔夜更佳。
2.准备一个小锅,倒入半锅水,将它煮开。把西兰菜和红萝卜放入水里,再加入1大匙油和半茶匙的盐汆烫至熟,捞起沥干备用。
3.预热不粘锅,将鸡腿逐一放入不粘锅,皮朝下。以中小火煎至出油,再翻过另一面煎,直到两面熟。
4.黑胡椒酱汁方面,先爆香蒜头与洋葱炒至软,加入拌匀的调味料和胡椒粉,滚至起泡泡,加入少许薯粉水勾芡即可。
(如果不喜欢酱汁太过的话浓稠可以不用勾芡)。
5.将鸡扒,西兰花和红萝卜,还有马铃薯泥摆在碟上,淋上黑胡椒酱汁就可趁热享用了!
**配料可自行选择自己喜欢的。

Black Pepper Chicken Chop
Ingredients:
4 boneless whole chicken thighs
Seasoning:
2 tablespoon oyster sauce
3 tablespoon saya sauce
1 teaspoon black pepper
2 tablespoon cooking wine
Black pepper sauce
1/4 big onion, chopped
1 tablespoon black pepper
1 tablespoon pepper seasoning
3 tablespoon oyster sauce
4-5 drops Maggi seasoning
150ml water to add
(mix all the ingredients above together with water)
2-3 cloves garlic, sliced
constarch +2tablspoon water to thicken the sauce
Side dishes:
1 Broccoli, cut it into few pieces
2 inches Carrots, sliced
Mashed potatoes
Steps:
1.Marinate the chicken thighs with all the seasoning, massage it for few minutes and keep it in the refrigerator for at least 3 hours or over night.
2.In a small pot, pour in some water, bring it to boil. Add in the broccoli and carrots, and 1 tablespoon of oil, half teaspoon of salt. Boil it until cooked, drained it.
3.Preheat non stick pan, add in the chicken thighs and fried it with the skin face down.Turn to another side and fried it until well cooked.
4.In another pan, saute the garlic and onion till fragrant, add in the sauce and cook until it become thicken.
(If you wish more thicken the sauce, then you may add in some corntach water.)
5.Transfer the chicken chop and side dishes into the plate, pour the black pepper sauce on the chicken chop and ready to served.
**You may use other ingredients as your side dishes besides broccoli and carrots such as salad and tomatoes

♡蒜香蜜汁叉烧 Barbecued Pork Belly (Char Siu)♡

今晚煮简易*蒜香蜜汁叉烧*
老公还以为叉烧是从外面买回来的。呵呵开心♡♡♡


 


蒜香蜜汁叉烧
材料:
五花肉1 大片(300克)
蒜末1 大匙
水适量

调味料:
李锦记蜜味烤酱(叉烧酱)2大匙
蚝油 1大匙
酱油 1大匙
胡椒粉少许
糖3-4大匙
红粉1/8茶匙
花雕酒 2大匙
做法:
1.将全部调味料除了花雕酒混合均匀,涂在五花肉上按摩3分钟。
2.装进有盖的容器里,让它腌制一个下午或隔夜味道更佳。
3.准备一个不粘锅,倒入少许油,爆香蒜末,然后把腌好的五花肉放入锅中,以中小火两面煎一下。
4.把腌制剩下的酱汁倒入锅中一起滚。其间如果发现酱汁过度蒸发,可加入适量的水和花雕酒再慢慢让它焖煮至熟,捞起叉烧,沥干。待稍微凉后,切片上碟。
5.剩余的酱汁再以小火煮至浓稠,将它淋在切片后的叉烧上。




Barbecued Pork Belly (Char Siu)
Ingredients:
(300g)1 big slice pork belly
1 tablespoon chopped garlic
water to add
Seasoning:
2 tablespoon Lee Kum Kee Oriental BBQ Sauce (char siu sauce)
1 tablespoon oyster sauce
1 tablespoon soya sauce
pepper to taste
3-4 tablespoon sugar
1/8 teaspoon red coloring powder
2 tablespoon cooking wine
Steps:
1. Mix the pork belly with all the seasoning except the cooking wine, massage the pork belly about 3 minutes.
2. Keep it in a covered container for an afternoon or keep over night in refrigerator.
3. Preheat a non stick pan with 2 tablespoon of oil. Saute the chopped garlic until fragrant. Add in the pork belly let it cook for a while.
4. Pour in the remain sauce into the pan and bring it to boil with the pork. If the sauce is too thick, you may add some water and cooking wine into it.
5. Let the pork cook until soft (about 15-20 minutes)take out and drain it.
6. Bring it to boil the remain sauce in the pan until it turn to thick sauce.
7.Sliced the pork belly and served it with the sauce.

♡冬瓜罗汉果茶 Winter Melon Momordica Grosvenori Tea♡



 大热天气,来杯冬瓜罗汉果茶来润以润喉,解解暑呗!




冬瓜罗汉果茶
材料:
冬瓜400克,去皮去籽刨成丝
罗汉果1个,洗净剥开成3-4边
水1200毫升
冰糖适量

做法:
先将水煮开,然后加入冬瓜丝和罗汉果。以中小火煮约半小时。最后加入适量的冰糖即可。
**可加入些龙眼干,味道更佳
**冷饮热饮都行

Winter melon Momordica grosvenori tea

Ingredients:
400g winter melon, (remove the skin & seeds, shredded)
1 momordica grosvenori (peel it into 3~4)
1200ml water
rock sugar to taste

steps:
Boiled the water, add in winter melon and Momordica, bring it to boil for about 30 minutes. Add in rock sugar to taste.
** you can add in dried longan into it too
**can be serve as a hot or cold drink.

♡印度香饭 & 咖喱鸡 Beriani Rice & Curry Chicken♡

山寨版简易印度香饭 Nasi Beriani & 咖喱鸡
简简单单又一餐。





印度香饭
材料:
食油1大匙
小葱头3颗,切片
八角2~3颗
肉桂棒1/2个
丁香2~3个
黄姜粉1大匙
白米一杯(可以用beras basmati)
水1 1/4杯
鸡精粉 1汤匙
胡椒粉适量

做法:
1.热锅,倒入油,爆香葱头片,加入肉桂棒,八角和丁香炒香。
2.加入黄姜粉炒匀,再加入白米快速拌匀。
3.加入鸡精粉,胡椒粉和水拌匀后,可米放入电饭锅中煮熟即可。
4.待电饭锅按键跳起5~10分钟后,即可舀出搭配咖喱鸡一起享用。
**可加入牛肉或鸡肉一起煮这香饭。
**真正的Nasi Beriani是有采用 beras basmati & 酥油Ghee 。

咖喱鸡材料:
1.鸡腿4只,切块
(倒入少许酱油腌制半至一)小时
2.马铃薯6个,切成四块
(先将马铃薯大火炸熟,备用)
3.椰浆半碗
4**小葱头8-10颗
**姜1个母子大块
**红辣椒5条,去籽
**辣椒干6-8条,用热水泡软去籽
**香茅2支,取尾部,切碎
(将以上4**的材料放入搅拌机搅幼,备用)
5.咖喱粉3大匙,参少许水拌匀
6.水500毫升

调味料:
盐适量
酱油适量

做法:
1.倒入适量的油,将已搅拌好的辣椒葱头糊和咖喱粉不停地翻炒至出油。
2.加入鸡肉块翻炒约五分钟,加入水,滚开后加入椰浆,马铃薯及适量的调味料,煮至鸡肉和马铃薯熟透即可。

♡香蕉曼煎糕 Banana Apam Balik♡

我家的两个宝贝很爱吃香蕉。
由于前天买了一大串的香蕉,也熟透得很,
就索性来做份*香蕉曼煎糕*给他们做早餐, 
营养得来又不会浪费!



面皮材料:
面粉200克
粟粉30克
幼糖150克(我只用100克)
盐半茶匙
苏打粉半茶匙
发粉2茶匙
水200毫升(可以以牛奶代替)
(将以上所有材料用手拌打蛋器拌至成面糊,存入冰箱四小时)

陷料:
花生碎
罐头甜玉米
牛油
白糖
香蕉3-4条,去皮切片
(依个人喜好加入份量)

做法:
热不粘锅,涂上少许牛油,待热后,加入适量的面糊盖上锅盖,以小火慢慢煎至面糊开始发洞洞。
撒上陷料再盖上锅盖,直到面皮成褐色,用锅铲把它折成半,就可以上碟切开享用了。趁热享用味道更佳。
**面糊不可下太多而导致过厚,很难熟。


Batter ingredients:
200g wheat flour
30g corn flour
100g granulated sugar
1/2 teaspoon salt
1/2 teaspoon soda bicarbonate
2 teaspoon baking powder
200ml water(can substitute with milk)
(Pour all the ingredients above into a big bowl and mixed all with egg whisk , pour it into a container and keep it in the refrigerator at least 4 hours)

Fillings:
crushed peanuts
canned creamy corn
butter
sugar
3-4bananas, cut into small pieces
(The fillings depend on your favourite. You can add in what ever you like eg: strawberry or kiwi)

1.preheat the non stick pan, add in butter (1teaspoon), pour one big spoonful of the batter with small simmer, until the batter started come out small bubbles.
2.Spread crushed peanuts, creamy corn, some butter and sugar, close the pan with a lid until the batter turn to brownish color. Use the spatula to fold it into half and take out from the pan.
3. Cut it into 2-3 pieces and served it while still hot.

♡黄金云吞金针菇 & 香炸云吞 Golden Wantan & Enoki mushroom Rolls & Fried Wantan♡

几天没上菜,先来份小吃呗~ *黄金云吞金针菇* & *香炸云吞*
香香脆脆的咔喳咔喳,一下就被搞定了^&^



 
 
黄金云吞金针菇

材料:
金针菇1包,洗净沥干水
云吞皮适量(约20片)
炸鸡粉1饭碗

做法:
1.把一小搓的金针菇放在云吞皮上,将它卷起, 在云吞皮边涂上少许水粘起来。
2.粘上炸鸡粉,放入热油中,以中小火炸至金黄色即可。




Ingredients:
1 pack enoki mushroom
20 pcs wantan skin
1 rice bowl kentucky flour


Steps:
1. Put on some ( a little bit) of enoki mushrooms on the wantan skin, roll it and glue it with some water .
2. Dip into the kentucky flour, let the enoki & wantan skin totally coated with flour. Fry it with medium heat until golden color.

♡佛手瓜炒冬粉 Stir Fry Chayote with Vermicelli♡

简单又好吃的*佛手瓜炒冬粉*
配饭配粥吃也可口~

佛手瓜炒冬粉
材料:
佛手瓜1个,去皮切丝
冬粉1把,浸软
萝卜2寸,切丝
虾米1茶匙,切碎
蒜末1大匙
水少许

调味料:
盐少许,酱油1大匙,胡椒粉适量

做法:
爆香蒜末和虾米,倒入佛手瓜和萝卜丝翻炒一下,加入调味料和少许水,翻炒至软,最后拌入冬粉炒至软和干身即可。


Stir Fry Chayote with Vermicelli 
Ingredients:
1 Chayote, skinned & shreded
1 handful of vermicelli, soak until soft & drained
2 inches carrots, shreded
1 teaspoon of dries shrimps, soak until soft & chopped
1 tablspoon chopped garlic
water to add

Seasoning:
salt, pepper, soya sauce to add

Steps:
1. Saute chopped garlic, dried shrimps until fragrant, add in shreded chayote, carrots and all the seasoning, stir fry it, add some water and cook until the chayote become soft, 
2. Lastly, add in vermicelli, stir well until vermicelli soft and absorb the water. Off the heat, transfer to a plate and ready for served.

♡搭冈饭与咖喱金枪鱼 Nasi Dagang & Gulai Ikan Tongkol♡

Nasi Dagang 搭冈饭是大马东海岸有名的椰浆饭之一。
这椰浆饭与普通的nasi lemak椰浆饭大有不同。
Nasi Dagang 搭冈饭是用两种米~糯米或红米,以白米与椰浆一起搭配而炊煮成的。
通常在马来摊子找到的是用香蕉叶来包着,里头还有咖喱金枪鱼 Gulai Ikan Tongkol呢。
有些餐馆,甚至搭配一些腌菜作为Nasi Dagang的佐料一起吃。

而我从小就喜欢吃这搭冈饭。现在住的地方难以找到,所以就动手自己来“煲办”来解一下“相思瘾”呵呵。
感觉上,用手抓搭冈饭吃还别有一番风味呢!!




材料:
(A)
小葱头 10颗
黄姜 1寸
南姜 1寸
辣椒糊 3大匙
咖喱粉 1大匙
(以上材料用搅拌机打碎至糊状)

(B)
金枪鱼 1公斤,洗净切块状
食油 3-4大匙
椰浆 100毫升
阿参片 1片
红辣椒,青辣椒 各1条,切成段
水 100毫升

(C)
盐和糖适量


做法:
1.预热食油,加入材料 (A), 翻炒至出油。
2.加入水,椰浆和阿参片,让它稍微煮沸。
3.慢慢地加入鱼肉,和青红辣椒。
4.加入适量的调味料,在让它煮五分钟或至鱼肉熟即可。
**椰浆浓度和咖喱粉依个人喜好自行调整。

Ingredients:
(A) 
10 shallots
1 inches turmeric
1 inches galangal
3 tablespoon chili paste
1 tablespoon curry powder
(Blend all the ingredients (A) with blender)

(B)
1 Ikan tongkol (Tuna fish) about 1kg, slice it into 4-5 pieces
3-4 tablespoon cooking oil
100 ml coconut milk
100 ml water
1 piece of tamarind
1 red chili, cut into two
1 green chili into two

(C) Salt & sugar to taste

Steps :
1. Preheat the cooking oil, pour in ingredient (A), sauté until it starts to smell fragrance.
2. Add in water, coconut milk and tamarind and bring it simmer for a while.
3. Add in tuna fish slowly and together with the red and green chili.
4. Add in salt and sugar to taste and let it cook for about 5 minutes or until the fish well cooked.

♡酸甜凉拌青瓜 Sweet and sour cucumber♡

酸甜凉拌青瓜 Sweet and sour cucumber
搭配搭冈饭与咖喱金枪鱼的好佐料~!



Sweet and sour cucumber
Ingredients:
1 cucumber, remove the cucumber seeds and cut into about 2 inches
1/2 bar of carrot, cut into about 2 inches
1 pineapple, remove the skin and slice it into small pieces.
1 onion, sliced
8 cherry tomatoes, sliced
50 ml vinegar
3-4 tablespoon sugar
Salt

Steps:
1.Mix all the ingredients with vinegar, sugar and some salt to taste.
2.Keep it into refrigerator for at least 2 hours.
3.Served it with the tuna fish curry.

酸甜凉拌青瓜
材料:
青瓜1条,去籽
红萝卜半条
凤梨1个,去皮,切小块
洋葱1个,切成8瓣
小番茄8颗,切成8小块
醋50毫升
糖3-4汤匙
盐少许

做法:
1.将所有材料放入个大容器中拌均匀,存入冰箱至少两个小时。
2.待冷后即可搭配咖喱金枪鱼一起享用。

♡搭冈饭 Nasi Dagang♡

Nasi Dagang 搭冈饭是大马东海岸有名的椰浆饭之一。
而这搭冈饭是用两种米~糯米或红米,以白米与椰浆一起搭配而炊煮成的。

为何此椰浆饭称为Nasi Dagang呢?
话说以前的小贩并没有固定的摊位摆卖。他们都是提饭菜从一个地方到另一个地方贩售,所以当时人的眼中,其形式已构成“商业”或“商人行为”,所以称之为“生意饭”(Nasi Dagang)。

搭冈饭 Nasi Dagang
材料:
白米3杯
糯米1杯
Halba 2茶匙
姜 1寸,切丝
小葱头 10颗,切丝
椰浆200毫升
盐 3/4 大匙
糖2大匙

做法:
1.将糯米和白米分盘浸软至少四小时后洗净,沥干水。
2.将它们放入大蒸盘,大火蒸 30分钟。
3.将蒸好的饭倒入大碗中,慢慢地加入椰浆,和其它材料(姜丝,葱头丝,盐,糖和halba)拌匀。
4.再将拌好后的饭倒回蒸盘中,再蒸20分钟。
5.二十分钟后,就可以趁热搭配咖喱金枪鱼一起享用。

Nasi dagang
Ingredients:
3 cup of rice
1 cup of glutinous rice
2 teaspoon halba
1 inches of ginger (sliced)
200ml coconut milk
10 shallots (sliced)
3/4 tablespoon of salt
2 tablespoon of sugar

Steps:
1. Soak both type of rice separately at least 4 hours. After that, wash and toss it .
2. Put it into the big steam tray and bring it to steam at least 30 minutes.
3. Transfer into big container, add in coconut milk, sliced shallots & ginger, sugar, and halba mix them well.
4. Steam the rice again for about 20 minutes.
5. When it is done to be cook, ready to serve with gulai Ikan tongkol.
